Gyuto knives are all-purpose knives that any kitchen could use and great starter knives for starting a set. They can be used to cut fish, meat and vegetables. 

Stainless steel gives it resistance to corrosion and easy maintenance. VG-10 is an improved blend of stainless steel with improved sharpness, durability and edge retention. This blade is made of VG-10 with the exterior cladded with softer steel. The hardness is around 60 to 61 HRC, which allows to produce a 1.9mm thick blade, double-edged with angles around 15-18º.

Even though its made in japan, the aesthetics are a bit rough. It doesn't stand out as a unique knife, but this doesn't compromise cutting performance. The handle is a yo-handle (western) made of plastic. The full tang gives it a more weight than the wa-handle, but more comfortable.  Overall, the design has a good geometry with great balance.

The 210mm blade is sharp out of the box and even gets sharper after steeling. It allows a clean and exact cut with no effort from the chef. It can even be too sharp as easily it can cut through skin. At the back there's a heel that can compromise rock chopping, but this can be grounded during sharpening.



The maintenance is very simple. The knives shouldn't ever be dishwashed since the high temperatures and the detergent degrade the edge. Just handwash it and wipe it dry. Even though stainless steel is known for its resistance to rusting, it can rust if left soaking for long. So it's best to prevent this from happening.

For beginners, this is a great starter japanese knife. It is simple to care for and its easy to sharpen even by a novice. The edge retention is long which means that won't need to be frequently grounded. Its reasonable price makes it easily replaceable if there's an error sharpening on the whetstone.



The strong handle allows a solid grip that gives you precision either cutting meat or vegetables. The thin acute edge will allows you to chop or cut. It works great for finely cutting herbs. Even though it looks like a regular knife, the sharp edge gives a performance not achievable by any other knife in this price range.
